Description
A classic French onion soup topped with crispy gruyère toasts.

- 4 large onions, thinly sliced
- 4 tbsp unsalted butter
- 1 tbsp olive oil
- 1 tsp sugar
- 1 tsp salt
- 1 tbsp all-purpose flour
- 6 cups beef broth
- 1/2 cup dry white wine
- 1 bay leaf
- 1 tsp thyme
- 1 baguette, sliced
- 1 1/2 cups grated gruyère cheese
Instructions
- Melt butter with olive oil in a large pot over medium heat.
- Add onions, sugar, and salt. Cook, stirring occasionally, until caramelized (about 45 minutes).
- Sprinkle flour over onions and stir for 1 minute.
- Add wine, broth, bay leaf, and thyme. Simmer for 30 minutes.
- Preheat oven broiler. Toast baguette slices.
- Ladle soup into oven-safe bowls. Top with toasted bread and grated gruyère.
- Broil until cheese melts and bubbles (about 2 minutes). Serve hot.
Notes
- Use sweet onions for deeper flavor.
- For vegetarian version, substitute beef broth with vegetable broth.
- Let soup cool slightly before broiling to prevent burning.
