Instructions
- Whisk flour, sugar, baking powder, baking soda, and salt in a bowl.
- In another bowl, mix ricotta, milk, eggs, and vanilla.
- Combine wet and dry ingredients. Stir in melted butter.
- Heat a non-stick pan over medium heat. Lightly grease with butter.
- Pour 1/4 cup batter per pancake. Cook until bubbles form, then flip.
- Cook until golden brown. Serve with syrup or fresh fruit.
