Ingredients

- 1 cup farro, cooked
- 2 cups arugula
- 1 cup red grapes, halved
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped walnuts
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F.
- Toss grapes with 1 tsp olive oil and roast for 15 minutes.
- In a bowl, combine cooked farro, arugula, roasted grapes, and walnuts.
- Drizzle with olive oil and balsamic vinegar.
- Sprinkle feta cheese, salt, and pepper. Toss gently.
- Serve immediately or chill for 30 minutes for better flavor.
