Delicious and moist muffins packed with fall flavors of apple and cinnamon.
Ingredients

- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 2 large eggs
- 1 cup milk
- 1 tsp vanilla extract
- 1 1/2 cups diced apples
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, whisk together flour, baking powder, salt, and cinnamon.
- In another bowl, mix melted butter and sugar. Add eggs, milk, and vanilla extract.
- Combine wet ingredients with dry ingredients. Fold in diced apples.
- Spoon batter into muffin cups, filling each 2/3 full.
- Bake for 20-25 minutes until golden brown.
- Cool for 5 minutes before removing from tin.
Notes
- Use fresh apples for best texture.
- Add 1/2 cup chopped nuts if desired.
- Store in airtight container for up to 3 days.
