A fresh and easy pasta salad recipe with crisp veggies, feta, and zesty Italian dressing. Perfect for any occasion, made in under 30 minutes.
Ingredients
16 ounces rotini or any medium pasta shape
⅔ cup crumbled feta cheese
1 medium English cucumber, chopped
1 pint grape tomatoes, halved
1 small bell pepper, chopped
¼ cup sliced black olives (optional)
¼ cup finely diced red onion or green onions
1 cup Italian dressing
3 tablespoons chopped parsley
Salt and pepper to taste
Instructions
1. Boil salted water and cook the pasta until al dente. Drain and rinse under cold water.
2. Chop cucumber, tomatoes, bell pepper, and onion. Slice olives if using.
3. In a large bowl, combine pasta, vegetables, feta, and parsley.
4. Pour in Italian dressing and toss gently until coated.
5. Season with salt and pepper. Chill for 30 minutes before serving.
Notes
Use gluten-free pasta for a gluten-free version.
Add chickpeas or grilled chicken for extra protein.
Keeps well refrigerated up to 4 days.
