Ingredients

  • 1 tbsp olive oil
  • 1 cup diced ham
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups diced potatoes
  • 4 cups chicken broth
  • 1 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ham and cook for 3-4 minutes until slightly browned.
  3. Stir in onion, carrots, celery, and garlic. Cook for 5 minutes.
  4. Add potatoes, chicken broth, salt, pepper, thyme, and bay leaf. Bring to a boil.
  5. Reduce heat and simmer for 15-20 minutes until potatoes are tender.
  6. Stir in milk and simmer for another 5 minutes.
  7. Remove bay leaf before serving.

Notes

  • Use leftover ham for better flavor.
  • Add more broth if you prefer a thinner soup.
  • Top with shredded cheese or fresh herbs if desired.
