A simple and hearty one-pot soup made with ham, potatoes, and vegetables for a comforting meal.
Ingredients

- 1 tbsp olive oil
- 1 cup diced ham
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 4 cups diced potatoes
- 4 cups chicken broth
- 1 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over medium heat.
- Add ham and cook for 3-4 minutes until slightly browned.
- Stir in onion, carrots, celery, and garlic. Cook for 5 minutes.
- Add potatoes, chicken broth, salt, pepper, thyme, and bay leaf. Bring to a boil.
- Reduce heat and simmer for 15-20 minutes until potatoes are tender.
- Stir in milk and simmer for another 5 minutes.
- Remove bay leaf before serving.
Notes
- Use leftover ham for better flavor.
- Add more broth if you prefer a thinner soup.
- Top with shredded cheese or fresh herbs if desired.
