- 1 lb chicken breast, diced
- 16 oz potato gnocchi
- 4 cups chicken broth
- 1 cup heavy cream
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions, carrots, and celery. Cook until softened, about 5 minutes.
- Add garlic, thyme, and rosemary. Cook for 1 minute until fragrant.
- Add diced chicken and cook until no longer pink, about 5-7 minutes.
- Pour in chicken broth and bring to a boil.
- Reduce heat to a simmer and add gnocchi. Cook for 3-4 minutes until gnocchi floats.
- Stir in heavy cream and season with salt and pepper.
- Simmer for 2-3 minutes until heated through.
- Garnish with fresh parsley before serving.
Notes
- Use store-bought gnocchi for convenience.
- For a lighter version, replace heavy cream with half-and-half.
- Add spinach or kale for extra greens.
- Leftovers can be refrigerated for up to 3 days.
