Ingredients

  • 6 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme

Instructions

  1. Place potatoes, onion, garlic, broth, salt, pepper, and thyme in the crockpot.
  2. Cook on low for 6 hours or high for 3 hours.
  3. Use a potato masher to slightly thicken the soup.
  4. Stir in heavy cream, butter, and cheese.
  5. Cook for another 30 minutes.
