Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1/3 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers, drained
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pound chicken breasts to 1/4-inch thickness.
  2. Mix flour, salt, and pepper in a shallow dish.
  3. Dredge chicken in flour mixture.
  4. Heat olive oil and 1 tablespoon butter in a skillet.
  5. Cook chicken for 3-4 minutes per side until golden brown.
  6. Remove chicken and set aside.
  7. Add broth, lemon juice, and capers to the skillet.
  8. Simmer for 3 minutes.
  9. Stir in remaining butter until melted.
  10. Return chicken to skillet and coat with sauce.
  11. Sprinkle with parsley before serving.
