Description
A simple and flavorful cauliflower curry that’s easy to make and packed with spices.
Ingredients

- 1 medium cauliflower, cut into florets
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp ginger, grated
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1 tsp garam masala
- 1 can (400ml) diced tomatoes
- 1 can (400ml) coconut milk
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a large pan over medium heat.
- Add onion and cook until soft.
- Stir in garlic, ginger, cumin, coriander, turmeric, and garam masala. Cook for 1 minute.
- Add cauliflower florets and stir to coat with spices.
- Pour in diced tomatoes and coconut milk. Bring to a simmer.
- Cover and cook for 15-20 minutes until cauliflower is tender.
- Season with salt and garnish with cilantro.
Notes
- Adjust spice levels to your preference.
- Serve with rice or naan bread.
- Leftovers can be stored for up to 3 days.
