- 2 large eggs
- 1/4 cup shredded cheddar cheese
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 cup cooked and crumbled breakfast sausage
- 1 large flour tortilla
- 1 tbsp butter
- Salt and pepper to taste
Instructions
- Heat a skillet over medium heat and melt the butter.
- Add diced onions and bell peppers, sauté for 2 minutes.
- Whisk the eggs in a bowl and pour them into the skillet.
- Scramble the eggs until fully cooked, then season with salt and pepper.
- Place the tortilla in a clean skillet over medium heat.
- Sprinkle half of the cheese on one side of the tortilla.
- Add the scrambled eggs, sausage, and remaining cheese.
- Fold the tortilla in half and cook for 1-2 minutes on each side until golden and crispy.
- Remove from heat, slice, and serve warm.
Notes
- Use whole wheat tortillas for a healthier option.
- Add hot sauce or salsa for extra flavor.
- Store leftovers in an airtight container in the fridge for up to 2 days.
