Ingredients

- 1/2 cup water
- 1/4 cup lemon juice
- 1 tbsp lemon zest
- 1/2 tsp citric acid (optional for extra tartness)
- Food coloring (yellow, optional)
Instructions
- Mix sugar, water, lemon juice, and lemon zest in a saucepan.
- Heat on medium until sugar dissolves completely.
- Bring to a boil and cook until the mixture reaches 300°F (hard crack stage).
- Remove from heat and stir in citric acid and food coloring if using.
- Pour into candy molds or onto a greased surface.
- Let cool completely before breaking into pieces.
