Ingredients
1 cup all-purpose flour
1 teaspoon salt
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon cinnamon
2 eggs
1/3 cup milk
1 tablespoon melted butter
1 1/4 cups diced fresh peaches
Oil for frying
Instructions
1. Whisk together flour, salt, sugar, baking powder, and cinnamon.
2. In another bowl, beat eggs, milk, and melted butter.
3. Combine wet and dry ingredients into a thick batter.
4. Gently fold in the diced peaches.
5. Heat oil to 350°F in a deep pan or skillet.
6. Drop spoonfuls of batter into hot oil and fry 2–3 minutes per side.
7. Drain on a wire rack and drizzle with glaze or dust with cinnamon sugar.
Notes
Use ripe but firm peaches for best texture.
Store leftovers in an airtight container.
Reheat in the oven or air fryer to keep them crisp.
