Description

A creamy and comforting soup made with potatoes, broccoli, and cheddar cheese, cooked slowly in a crockpot for rich flavor.


Ingredients

Scale
  • 4 cups diced potatoes
  • 2 cups chopped broccoli
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp butter

Instructions

  1. Add potatoes, broccoli, onion, garlic, and vegetable broth to the crockpot.
  2. Cook on low for 6 hours or high for 3 hours.
  3. Use an immersion blender to partially blend the soup.
  4. Stir in cheddar cheese, heavy cream, salt, pepper, and butter.
  5. Cook for another 30 minutes until cheese is melted.
  6. Serve hot.

Notes

  • For a thicker soup, blend more of the potatoes.
  • Add cooked bacon for extra flavor.
  • Store leftovers in the refrigerator for up to 3 days.
