A creamy and comforting soup made with potatoes, broccoli, and cheddar cheese, cooked slowly in a crockpot for rich flavor.
Ingredients

- 4 cups diced potatoes
- 2 cups chopped broccoli
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup shredded cheddar cheese
- 1 cup heavy cream
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp butter
Instructions
- Add potatoes, broccoli, onion, garlic, and vegetable broth to the crockpot.
- Cook on low for 6 hours or high for 3 hours.
- Use an immersion blender to partially blend the soup.
- Stir in cheddar cheese, heavy cream, salt, pepper, and butter.
- Cook for another 30 minutes until cheese is melted.
- Serve hot.
Notes
- For a thicker soup, blend more of the potatoes.
- Add cooked bacon for extra flavor.
- Store leftovers in the refrigerator for up to 3 days.
