Description
A simple and flavorful slow-cooked dish with tender chicken and sweet potatoes in a honey garlic sauce.

- 4 boneless, skinless chicken breasts
- 2 medium sweet potatoes, peeled and cubed
- 1/3 cup honey
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 1/2 teaspoon ground ginger
- 1/4 teaspoon black pepper
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1 tablespoon chopped green onions (for garnish)
Instructions
- Place chicken and sweet potatoes in a slow cooker.
- In a bowl, whisk honey, soy sauce, garlic, ginger, and black pepper. Pour over chicken and sweet potatoes.
- Cover and cook on low for 5-6 hours or high for 3-4 hours.
- Remove chicken and sweet potatoes. Keep warm.
- Mix cornstarch and water in a small bowl. Stir into the slow cooker with the sauce. Cover and cook on high for 10-15 minutes until thickened.
- Return chicken and sweet potatoes to the slow cooker. Stir to coat in the sauce.
- Garnish with green onions before serving.
Notes
- For extra flavor, marinate chicken in the sauce for 1 hour before cooking.
- Serve with rice or steamed vegetables.
- Adjust honey and soy sauce to taste.
