Description
A comforting and healthy crockpot chickpea stew made with pantry ingredients. Perfect for meal prep or a cozy family dinner.
Ingredients
2 cans (15 oz each) chickpeas, drained and rinsed
1 can (14 oz) diced tomatoes
1 onion, chopped
2 carrots, diced
1 cup vegetable broth
1 tsp cumin
1 tsp paprika
Salt and pepper to taste
Instructions
1. Add all ingredients to the crockpot.
2. Stir to combine.
3. Cook on low for 6–8 hours or high for 3–4 hours.
4. Taste and adjust seasoning.
5. Serve warm with toppings or sides of choice.
Notes
You can add potatoes, greens, or coconut milk for variation.
Refrigerates well for up to 4 days or freeze up to 3 months.
