Crockpot Chicken Lo Mein: Easy Slow Cooker Takeout at Home

Description

A slow cooker version of a takeout classic, this Crockpot Chicken Lo Mein features tender shredded chicken, lo mein noodles, crisp veggies, and a savory-sweet sauce.


Ingredients

1 lb boneless, skinless chicken thighs

3 cups mixed stir-fry vegetables (carrots, bell peppers, snow peas)

1/2 cup soy sauce

1/4 cup hoisin sauce

1 tbsp ginger, minced

1 tsp sesame oil

8 oz lo mein noodles, cooked


Instructions

1. Place chicken in the bottom of the crockpot.

2. In a small bowl, whisk together soy sauce, hoisin sauce, ginger, and sesame oil.

3. Pour sauce mixture over chicken. Cook on LOW for 4–5 hours or HIGH for 2–3 hours.

4. Shred the chicken in the crockpot using two forks.

5. Add stir-fry vegetables and cook for an additional 30–45 minutes.

6. Stir in the cooked noodles and let rest 10 minutes before serving.

Notes

Use chicken thighs for the most flavor, but breasts work too.

Add veggies at the end to prevent overcooking.

Serve with sesame seeds, scallions, or a splash of lime for extra flavor.
