Ingredients

2 packages (1 ounce each) dry onion soup mix

1/2 teaspoon paprika

2 pounds beef stew meat or boneless beef roast, cut in 1-inch pieces

5 medium potatoes, peeled and diced

23 cups baby carrots

1 small yellow onion, chopped

2 cans (10 ounces each) cream of celery soup

1 cup ketchup (or substitute tomato sauce)


Instructions

1. Combine onion soup mix and paprika in a large plastic bag. Add meat and shake to coat.

2. Spread coated meat evenly in a greased 7-quart crock pot.

3. Top meat with diced potatoes, carrots, and onion.

4. Mix cream of celery soup and ketchup in a bowl. Pour over meat and vegetables.

5. Cover and cook on LOW for 7–8 hours or until meat is tender and vegetables are soft.

6. Stir before serving and garnish if desired.

Notes

Substitute cream of mushroom or onion soup for variation.

Use tomato sauce instead of ketchup for a less sweet option.

Let sit uncovered for last 30 minutes to thicken sauce if needed.
