Instructions
- Place grated potatoes and onion in a clean kitchen towel and squeeze out excess moisture.
- Transfer to a bowl and mix with eggs, flour, salt, and pepper.
- Heat oil in a skillet over medium heat.
- Scoop about 1/4 cup of the mixture per latke and flatten into rounds.
- Fry for 3-4 minutes per side until golden brown and crispy.
- Drain on paper towels and serve warm.

- Use a box grater or food processor to shred potatoes quickly.
- Keep latkes warm in the oven at 200°F if making a large batch.
- Serve with sour cream or applesauce.
