Ingredients

- 2 large eggplants
- 1 cup flour
- 3 eggs
- 2 cups breadcrumbs
- 1 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 3 cups tomato sauce
- 1/4 cup olive oil
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Slice the eggplants into 1/2-inch rounds.
- Season with salt and let sit for 15 minutes to remove bitterness.
- Pat dry and coat each slice in flour, then egg, then breadcrumbs mixed with Parmesan.
- Fry in olive oil until golden brown on both sides.
- Layer eggplant slices, tomato sauce, and mozzarella in a baking dish.
- Repeat layers and top with extra cheese.
- Bake at 375°F for 25 minutes until bubbly and golden.
Notes
- Use fresh mozzarella for better melting.
- Drain fried eggplant on paper towels to remove excess oil.
- Let rest for 10 minutes before serving.
