Description

Ingredients

  • 2 large eggplants
  • 1 cup flour
  • 3 eggs
  • 2 cups breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 3 cups tomato sauce
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Slice the eggplants into 1/2-inch rounds.
  2. Season with salt and let sit for 15 minutes to remove bitterness.
  3. Pat dry and coat each slice in flour, then egg, then breadcrumbs mixed with Parmesan.
  4. Fry in olive oil until golden brown on both sides.
  5. Layer eggplant slices, tomato sauce, and mozzarella in a baking dish.
  6. Repeat layers and top with extra cheese.
  7. Bake at 375°F for 25 minutes until bubbly and golden.

Notes

  • Use fresh mozzarella for better melting.
  • Drain fried eggplant on paper towels to remove excess oil.
