Description

Ingredients

2 medium zucchinis (about 2 cups grated)

1 teaspoon salt

1 large egg

¼ cup gluten-free flour (or all-purpose)

2 tablespoons grated Parmesan (optional)

2 cloves garlic, minced

¼ teaspoon black pepper

¼ teaspoon paprika or chili powder (optional)

2 tablespoons chopped parsley or dill

3 tablespoons olive oil (for frying)


Instructions

1. Grate zucchini and toss with salt. Let sit 10 minutes.

2. Squeeze out all moisture using a towel.

3. Mix with egg, flour, garlic, cheese, spices, and herbs.

4. Heat oil in pan over medium.

5. Scoop and flatten spoonfuls of batter into pan.

6. Cook 3–4 minutes per side until golden and crisp.

7. Transfer to paper towels and serve warm.

Notes

To keep them crispy, avoid stacking while hot.
