Ingredients

Scale

2 medium zucchinis (about 2 cups grated)

1 teaspoon salt

1 large egg

¼ cup gluten-free flour (or all-purpose)

2 tablespoons grated Parmesan cheese (optional)

2 cloves garlic, minced

¼ teaspoon black pepper

¼ teaspoon paprika or chili powder (optional)

2 tablespoons chopped parsley or dill

3 tablespoons olive oil (for frying)


Instructions

1. Grate zucchini and toss with salt. Let sit 10 minutes, then squeeze out liquid.

2. In a bowl, combine zucchini, egg, flour, garlic, cheese, spices, and herbs.

3. Heat olive oil in a skillet over medium heat.

4. Drop batter by tablespoons into the pan, flatten slightly.

5. Cook 3–4 minutes per side until golden and crisp.

6. Transfer to paper towel or rack. Repeat with remaining batter.

Notes

Swap flour for gluten-free or almond flour.

Add corn, scallions, or crumbled feta for variation.
