Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season salmon fillets with salt and pepper, then sear in the skillet for 3-4 minutes on each side. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté for 1 minute.
  4. Pour in heavy cream and chicken broth, stirring to combine.
  5. Add sun-dried tomatoes, spinach, and Italian seasoning. Cook until spinach wilts.
  6. Stir in Parmesan cheese until the sauce thickens.
  7. Return salmon fillets to the skillet, spooning sauce over them. Cook for an additional 2-3 minutes.
