A comforting and creamy soup featuring tender turkey and nutty wild rice.
Ingredients

- 2 cups cooked turkey, shredded
- 1 cup wild rice, uncooked
- 4 cups chicken broth
- 1 cup heavy cream
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp butter
Instructions
- Melt butter in a large pot over medium heat.
- Add onion, carrots, celery, and garlic. Cook until softened.
- Pour in chicken broth and bring to a boil.
- Add wild rice, reduce heat, and simmer for 30 minutes.
- Stir in shredded turkey, heavy cream, thyme, salt, and pepper.
- Simmer for another 10 minutes until heated through.
- Serve hot.
Notes
- Use leftover turkey for an easy meal.
- For a thicker soup, blend a portion before adding cream.
- Substitute half-and-half for heavy cream if preferred.
