A quick and easy creamy tortellini carbonara recipe paired with sweet cornbread cookies for a delightful meal.


Ingredients

  • 1 package (9 oz) refrigerated tortellini
  • 4 slices bacon, diced
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 egg yolk
  • Salt and pepper to taste
  • 1 cup cornmeal
  • 1/2 cup flour
  • 1/4 cup sugar
  • 1/2 tsp baking powder
  • 1/4 cup butter, melted
  • 1/4 cup milk
  • 1 egg

Instructions

  1. Cook tortellini according to package instructions. Drain and set aside.
  2. In a skillet, cook bacon until crispy. Remove and set aside.
  3. In the same skillet, sauté garlic for 1 minute.
  4. Whisk together cream, Parmesan, and egg yolk. Pour into skillet and stir until thickened.
  5. Add cooked tortellini and bacon. Toss to coat. Season with salt and pepper.
  6. For cornbread cookies, mix cornmeal, flour, sugar, and baking powder.
  7. Add melted butter, milk, and egg. Stir until combined.
  8. Drop spoonfuls onto a baking sheet and bake at 375°F for 10-12 minutes.

  • Adjust creaminess by adding more or less heavy cream.
