Description

A rich and creamy tomato basil soup that’s easy to make and perfect for any occasion.


Ingredients

Scale
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cans (28 oz each) crushed tomatoes
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil, chopped
  • 1 tsp sugar
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Stir in crushed tomatoes and vegetable broth.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Blend the soup until smooth using an immersion blender.
  6. Stir in heavy cream, basil, sugar, salt, and pepper.
  7. Simmer for another 5 minutes.
  8. Serve hot.

Notes

  • For a lighter version, replace heavy cream with coconut milk.
  • Garnish with extra basil or croutons if desired.
