Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • 1 can (400ml) coconut milk
  • 2 cups vegetable broth
  • Juice of 1 lime
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Add garlic and spices, stirring for 1 minute until fragrant.
  4. Add sweet potatoes, coconut milk, and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes until sweet potatoes are tender.
  6. Blend the soup until smooth using an immersion blender or regular blender.
  7. Stir in lime juice, salt, and pepper. Adjust seasoning if needed.
  8. Serve hot, garnished with fresh cilantro.
