- 2 large sweet potatoes, peeled and cubed
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- 1 can (400ml) coconut milk
- 2 cups vegetable broth
- Juice of 1 lime
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until soft, about 5 minutes.
- Add garlic and spices, stirring for 1 minute until fragrant.
- Add sweet potatoes, coconut milk, and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 20-25 minutes until sweet potatoes are tender.
- Blend the soup until smooth using an immersion blender or regular blender.
- Stir in lime juice, salt, and pepper. Adjust seasoning if needed.
- Serve hot, garnished with fresh cilantro.

- For extra creaminess, use full-fat coconut milk.
