Ingredients

- 2 large leeks, cleaned and sliced
- 4 medium potatoes, peeled and diced
- 1 tbsp butter
- 4 cups vegetable broth
- 1 cup milk
- 1/4 cup fresh chives, chopped
- Salt and pepper to taste
Instructions
- Melt butter in a large pot over medium heat.
- Add leeks and sauté until soft, about 5 minutes.
- Add potatoes and vegetable broth. Bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 15 minutes.
- Blend the soup until smooth using an immersion blender.
- Stir in milk and season with salt and pepper.
- Garnish with fresh chives before serving.
Notes
- Use Yukon Gold potatoes for a creamier texture.
- For a richer taste, substitute milk with heavy cream.
- Store leftovers in an airtight container for up to 3 days.
