Description

A creamy and comforting soup made with leeks, potatoes, and fresh chives.


Ingredients

  • 2 large leeks, cleaned and sliced
  • 4 medium potatoes, peeled and diced
  • 1 tbsp butter
  • 4 cups vegetable broth
  • 1 cup milk
  • 1/4 cup fresh chives, chopped
  • Salt and pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add leeks and sauté until soft, about 5 minutes.
  3. Add potatoes and vegetable broth. Bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  5. Blend the soup until smooth using an immersion blender.
  6. Stir in milk and season with salt and pepper.
  7. Garnish with fresh chives before serving.
