Instructions
- In a bowl, mix chia seeds, coconut milk, maple syrup, and vanilla extract.
- Stir well to combine and let sit for 5 minutes.
- Stir again to prevent clumping, then cover and refrigerate overnight or for at least 4 hours.
- Before serving, stir once more and top with fresh berries or shredded coconut if desired.
