A hearty and flavorful soup made with potatoes and Cajun spices.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 2 tbsp butter
  • 2 tbsp olive oil
  • Salt to taste

Instructions

  1. Heat olive oil and butter in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add diced potatoes, Cajun seasoning, smoked paprika, and black pepper. Stir well.
  4. Pour in chicken broth, bring to a boil, then reduce heat and simmer for 20 minutes or until potatoes are tender.
  5. Use a blender to puree half the soup for a creamy texture.
  6. Stir in heavy cream and adjust salt if needed.
  7. Simmer for another 5 minutes before serving.

Notes

  • For extra heat, add a pinch of cayenne pepper.
  • Garnish with chopped green onions or shredded cheese.
