A hearty and flavorful soup made with potatoes and Cajun spices.
Ingredients

- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tbsp Cajun seasoning
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 2 tbsp butter
- 2 tbsp olive oil
- Salt to taste
Instructions
- Heat olive oil and butter in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add diced potatoes, Cajun seasoning, smoked paprika, and black pepper. Stir well.
- Pour in chicken broth, bring to a boil, then reduce heat and simmer for 20 minutes or until potatoes are tender.
- Use a blender to puree half the soup for a creamy texture.
- Stir in heavy cream and adjust salt if needed.
- Simmer for another 5 minutes before serving.
Notes
- For extra heat, add a pinch of cayenne pepper.
- Garnish with chopped green onions or shredded cheese.
- Store leftovers in an airtight container for up to 3 days.
