- 4 cups diced potatoes
- 1 cup diced onion
- 1 cup diced celery
- 1 cup diced bell pepper
- 4 cloves minced garlic
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, celery, bell pepper, and garlic. Sauté until softened.
- Stir in diced potatoes and Cajun seasoning. Cook for 2 minutes.
- Pour in broth and bring to a boil. Reduce heat and simmer for 15 minutes or until potatoes are tender.
- Use an immersion blender to partially blend the soup for a creamy texture.
- Stir in heavy cream and heat through.
- Season with salt and pepper.
- Serve hot.

- For extra spice, add a pinch of cayenne pepper.
- For a thicker soup, blend more of the potatoes.
