Description

A rich and creamy soup combining broccoli, cheddar, and potatoes for a comforting meal.


Ingredients

Scale
  • 2 cups broccoli florets
  • 3 medium potatoes, diced
  • 1 cup shredded cheddar cheese
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Stir in diced potatoes and vegetable broth. Bring to a boil.
  4. Reduce heat, cover, and simmer until potatoes are tender.
  5. Add broccoli florets and cook for 5 more minutes.
  6. Pour in heavy cream and stir in cheddar cheese until melted.
  7. Season with salt and pepper.
  8. Blend half the soup for a creamier texture if desired.
  9. Serve hot.

Notes

  • For a thicker soup, blend all of it.
  • Add more cheese for extra richness.
