Ingredients

- 2 cups broccoli florets
- 3 medium potatoes, diced
- 1 cup shredded cheddar cheese
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Melt butter in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in diced potatoes and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer until potatoes are tender.
- Add broccoli florets and cook for 5 more minutes.
- Pour in heavy cream and stir in cheddar cheese until melted.
- Season with salt and pepper.
- Blend half the soup for a creamier texture if desired.
- Serve hot.
Notes
- For a thicker soup, blend all of it.
- Add more cheese for extra richness.
- Store leftovers in the fridge for up to 3 days.
