- 1 cup cooked spinach, drained
- 1/2 cup cream cheese
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Mix spinach, cream cheese, Parmesan, garlic, salt, and pepper in a bowl.
- Cut a pocket into each chicken breast.
- Stuff each breast with the spinach mixture.
- Heat olive oil in a skillet over medium-high heat.
- Sear chicken for 2-3 minutes per side until golden.
- Transfer to a baking dish and bake for 20-25 minutes.
- Let rest for 5 minutes before serving.

- Pat spinach dry to avoid excess moisture.
- Use toothpicks to secure the pockets if needed.
