Ingredients

- 2 cups rolled oats
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup dried cranberries
- 1 tbsp orange zest
- 1/4 cup orange juice
- 1 1/2 cups milk
- 1 egg
- 1/4 cup honey
- 1 tsp vanilla extract
- 1 tbsp melted butter
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish.
- In a large bowl, mix oats, baking powder, salt, cranberries, and orange zest.
- In another bowl, whisk orange juice, milk, egg, honey, vanilla, and melted butter.
- Pour wet ingredients into dry ingredients and stir until combined.
- Transfer mixture to the baking dish and spread evenly.
- Bake for 35-40 minutes until set and golden brown.
- Cool slightly before cutting into squares.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Can be reheated in microwave for 30 seconds.
- Substitute maple syrup for honey if preferred.
