- 1 cup dried lentils
- 1 can (14 oz) coconut milk
- 1 tbsp curry powder
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tbsp ginger, grated
- 1 carrot, chopped
- 1 bell pepper, diced
- 2 cups vegetable broth
- 1 tbsp olive oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse the lentils and set aside.
- Heat olive oil in a pot over medium heat. Add onion, garlic, and ginger. Cook for 2 minutes.
- Add carrot and bell pepper. Cook for another 3 minutes.
- Stir in curry powder and cook for 1 minute.
- Add lentils, coconut milk, and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 25 minutes, or until lentils are tender.
- Season with salt and garnish with cilantro before serving.
Notes
- You can use red or green lentils for this recipe.
- Adjust the curry powder to your spice preference.
- Store leftovers in an airtight container for up to 3 days.
