Description
Soft, moist, and full of coconut flavor, this coconut bread is easy to make and perfect for breakfast or dessert.
Ingredients
2 cups flour
1 1/2 tsp baking powder
3/4 tsp salt
1/4 tsp baking soda
1 cup sugar (or xylitol for sugar-free)
1 cup canned coconut milk
1/2 cup plain yogurt of choice
Instructions
1. Preheat oven to 350°F and grease a loaf pan.
2. In a large bowl, whisk together flour, baking powder, salt, and baking soda.
3. In a separate bowl, mix sugar, coconut milk, and yogurt.
4. Combine wet and dry ingredients, mixing until just combined.
5. Pour batter into prepared pan and smooth the top.
6. Bake for 45–55 minutes, or until a toothpick comes out clean.
7. Cool completely before slicing and serving.
Notes
You can substitute all-purpose flour with a gluten-free blend.
Add shredded coconut or lime zest for extra flavor.
Store at room temperature up to 3 days or refrigerate for longer freshness.
