- 1 whole turkey (12–14 lbs)
- 1/2 cup unsalted butter, softened
- 2 tbsp chopped fresh rosemary
- 2 tbsp chopped fresh thyme
- 2 tbsp chopped fresh sage
- 1 tbsp salt
- 1 tsp black pepper
- 1 lemon, halved
- 1 onion, quartered
- 4 garlic cloves, crushed
- 2 cups chicken or turkey broth
Instructions
- Preheat oven to 325°F (165°C).
- Rinse the turkey and pat dry with paper towels.
- Mix butter, rosemary, thyme, sage, salt, and pepper in a bowl.
- Rub the herb butter under the skin and all over the turkey.
- Stuff the cavity with lemon, onion, and garlic.
- Place the turkey on a rack in a roasting pan and pour broth into the pan.
- Roast for about 3-4 hours, basting every 30 minutes, until internal temperature reaches 165°F (74°C).
- Let rest for 20 minutes before carving.
