Ingredients

- 1 cup long-grain white rice
- 2 cups water
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced and zested
- 1 tbsp olive oil
- 1/2 tsp salt
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, heat olive oil over medium heat.
- Add the rice and stir for 1 minute.
- Pour in water and salt, bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes.
- Remove from heat and let it sit, covered, for 5 minutes.
- Fluff the rice with a fork and mix in cilantro, lime juice, and zest.
- Serve warm.

- Use fresh lime juice for the best flavor.
- Adjust salt to taste.
- For extra flavor, toast the rice lightly before adding water.
