Ingredients
1 lb Chicken tenderloins cooked and diced
1 can Black beans 14.5 oz
1 can diced Tomatoes 14.5 oz
1 small White onion
1 Red bell pepper
½ packet Taco seasoning
1 cup shredded Cheddar cheese
1 cup Sour cream
1 Lime juiced
2 tbsp Green onions diced
Cooking spray
Optional toppings: Sour cream, Avocado slices, Jalapeños, Tortilla chips, Salsa
Instructions
1. Preheat oven to 375°F and spray a casserole dish.
2. Mix chicken, beans, tomatoes, onion, bell pepper, taco seasoning, sour cream, and lime juice.
3. Spread the mixture into the casserole dish.
4. Top with shredded cheddar cheese.
5. Bake for 20–25 minutes until bubbly.
6. Let cool for 5 minutes before serving.
7. Top with green onions and serve with desired toppings.
Notes
You can use rotisserie chicken for convenience.
Add jalapeños or hot sauce for extra spice.
Freeze before baking for up to 2 months.
