- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons butter
- 8 ounces mushrooms, sliced
- 1/2 cup Marsala wine
- 1/2 cup chicken broth
- 1 teaspoon fresh thyme
Instructions
- Pound the chicken breasts to an even thickness.
- Season the flour with salt and pepper.
- Dredge the chicken in the flour mixture.
- Heat olive oil and butter in a pan over medium heat.
- Cook the chicken until golden, then remove from the pan.
- Add mushrooms to the pan and cook until softened.
- Pour in Marsala wine and chicken broth, scraping up any browned bits.
- Return the chicken to the pan and simmer until cooked through.
- Garnish with fresh thyme before serving.

- Use dry Marsala wine for the best flavor.
- Serve with mashed potatoes or pasta.
