Description
Crispy on the outside, creamy on the inside, these cheesy mashed potato puffs are the perfect way to use leftover mashed potatoes. They make a great side dish or snack.

- 2 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1/4 cup breadcrumbs
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 1 tbsp chopped fresh chives
Instructions
- Preheat oven to 400°F (200°C). Grease a muffin tin.
- In a bowl, mix mashed potatoes, cheddar cheese, Parmesan cheese, egg, breadcrumbs, garlic powder, onion powder, and black pepper.
- Scoop the mixture into the muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes until golden brown.
- Remove from oven and let cool for 5 minutes.
- Garnish with fresh chives before serving.
Notes
- Use cold mashed potatoes for best results.
- Add cooked bacon bits for extra flavor.
- Store leftovers in an airtight container for up to 3 days.
