Description

Crispy on the outside, creamy on the inside, these cheesy mashed potato puffs are the perfect way to use leftover mashed potatoes. They make a great side dish or snack.


Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/4 cup breadcrumbs
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1 tbsp chopped fresh chives

Instructions

  1. Preheat oven to 400°F (200°C). Grease a muffin tin.
  2. In a bowl, mix mashed potatoes, cheddar cheese, Parmesan cheese, egg, breadcrumbs, garlic powder, onion powder, and black pepper.
  3. Scoop the mixture into the muffin tin, filling each cup about 3/4 full.
  4. Bake for 20-25 minutes until golden brown.
  5. Remove from oven and let cool for 5 minutes.
  6. Garnish with fresh chives before serving.

Notes

  • Use cold mashed potatoes for best results.
  • Add cooked bacon bits for extra flavor.
  • Store leftovers in an airtight container for up to 3 days.
