- 1 lb ground beef
- 4 cups diced potatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Brown the ground beef in a pot over medium heat.
- Add onion and garlic, cook until softened.
- Stir in potatoes and beef broth. Bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Add milk, butter, salt, and pepper. Stir well.
- Mix in shredded cheese until melted.
- Serve hot.
Notes
- Use sharp cheddar for a stronger flavor.
- Add more broth if you prefer a thinner soup.
- Top with extra cheese before serving.
