Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon melted butter
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon chopped fresh herbs (such as parsley, chives, or thyme)

Instructions

  1. Preheat oven to 450°F (230°C). Grease a popover pan or muffin tin.
  2. In a bowl, whisk together flour, salt, and pepper.
  3. In another bowl, mix milk, eggs, and melted butter.
  4. Combine wet and dry ingredients, stirring until just blended.
  5. Fold in cheese and herbs.
  6. Fill each cup 2/3 full with batter.
  7. Bake for 20 minutes, then reduce heat to 350°F (175°C) and bake for 15 more minutes.
  8. Remove from oven and serve warm.

Notes

  • Do not open the oven during baking to prevent popovers from collapsing.
  • For crispier popovers, bake an extra 5 minutes.
  • Substitute any hard cheese if preferred.
