Description
This hearty Cattle Drive Casserole combines seasoned beef, creamy topping, and cheesy biscuit crust for the ultimate weeknight comfort food.
Ingredients
1.5 pounds Lean Ground Beef
1 Red Bell Pepper, seeded, chopped
1 Yellow Onion, chopped
1 ounce Taco Seasoning Mix
2 ½ cups Biscuit Mix, like Bisquick
1 cup Water
Cooking Spray, like Pam
½ cup Sour Cream
½ cup Mayonnaise
4 ounces Diced Green Chiles, drained
1 ½ cups Cheddar Cheese, Fiesta Blend, shredded, divided
1 teaspoon Garlic Powder
½ cup Salsa, mild
Instructions
1. Preheat oven to 350°F and spray 9×13″ dish with cooking spray.
2. In a large skillet, cook ground beef, onion, and bell pepper until browned.
3. Stir in taco seasoning and a splash of water; cook until thickened.
4. In a bowl, mix biscuit mix and water. Spread in baking dish.
5. Top biscuit layer with beef mixture evenly.
6. In another bowl, combine sour cream, mayo, green chiles, garlic powder, and 1 cup cheese.
7. Spread the creamy mix over beef. Top with remaining cheese.
8. Bake uncovered for 30–35 minutes until golden and bubbling.
9. Cool 10 minutes before slicing. Serve with salsa or fresh toppings.
Notes
Add corn or black beans for variation.
Use spicy taco seasoning or hot green chiles for a bolder kick.
