Ingredients

- 4 cups chopped carrots
- 1 tbsp grated ginger
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup coconut milk
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic. Cook for 3 minutes.
- Stir in carrots and ginger. Cook for 2 minutes.
- Pour in vegetable broth. Bring to a boil.
- Reduce heat. Simmer for 20 minutes until carrots soften.
- Blend soup until smooth.
- Stir in coconut milk, salt, and pepper.
- Serve warm.
Notes
- Store leftovers in the fridge for up to 3 days.
- Freeze for up to 1 month.
