- 1 cup fresh mozzarella, sliced
- 2 ripe tomatoes, sliced
- 1/4 cup balsamic vinegar
- 1 tablespoon honey
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium heat. Sear the chicken for 3-4 minutes on each side until golden brown.
- Top each chicken breast with mozzarella and tomato slices.
- Transfer the skillet to the oven and bake for 15-20 minutes until the chicken is cooked through.
- While the chicken bakes, combine balsamic vinegar and honey in a small saucepan. Simmer over low heat until reduced by half, about 5-7 minutes.
- Remove the chicken from the oven, drizzle with balsamic reduction, and garnish with fresh basil leaves.
