Description
A bold, creamy Cajun White Chicken Chili made with chicken, sausage, shrimp, and smoky spices for a one-pot comfort food classic.
Ingredients
3 tablespoons olive oil
1 pound boneless skinless chicken breast, cubed
16 ounces andouille sausage, sliced
1 medium white onion, diced
4 medium celery ribs, sliced
1 medium green bell pepper, diced
1 medium jalapeno, minced
4 cloves garlic, minced
2 teaspoons ground cumin
1 teaspoon smoked paprika
1 teaspoon chili powder
1 teaspoon cayenne pepper
3 tablespoons all-purpose flour
4 cups chicken broth
2 (15 ounce) cans great northern beans, drained
1/2 pound raw shrimp, peeled, deveined, tails removed
1/2 cup heavy cream
Instructions
1. Heat olive oil in a large pot. Brown the chicken for 5–6 minutes. Remove and set aside.
2. Brown andouille sausage in the same pot.
3. Add onion, celery, bell pepper, and jalapeño. Sauté until soft.
4. Stir in garlic, then add all spices and flour. Mix well.
5. Slowly pour in chicken broth, stirring constantly.
6. Return chicken to the pot. Add beans. Simmer for 20–25 minutes.
7. Add shrimp and cook until pink. Stir in heavy cream before serving.
8. Serve hot with toppings of choice.
Notes
You can substitute shrimp with more chicken or skip it entirely.
To thicken the chili further, mash some of the beans before adding.
Coconut cream makes a great dairy-free swap.
