- 4 cups diced potatoes
- 1 onion, chopped
- 2 celery stalks, chopped
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tbsp Cajun seasoning
- 1 tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 lb Andouille sausage, sliced
Instructions
- In a large pot, melt butter over medium heat. Add onion, celery, and bell pepper. Cook until soft.
- Add garlic and Cajun seasoning. Stir for 1 minute.
- Sprinkle flour over vegetables and cook for 2 minutes, stirring constantly.
- Gradually pour in chicken broth while stirring to avoid lumps.
- Add potatoes, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes or until potatoes are tender.
- Stir in heavy cream and Andouille sausage. Simmer for another 5 minutes.
- Serve hot, garnished with green onions if desired.
Notes
- For a spicier soup, add extra Cajun seasoning.
- Substitute vegetable broth for a vegetarian version.
- Store leftovers in an airtight container for up to 3 days.
