- 1 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream butter and sugar until light and fluffy.
- Beat in egg yolk and vanilla extract.
- Gradually mix in flour and salt until dough forms.
- Roll dough into 1-inch balls and place on prepared baking sheets. Flatten slightly with a fork.
- Bake for 12-15 minutes or until edges are lightly golden.
- Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
Notes
- Dough can be refrigerated for up to 3 days before baking.
- For variation, add lemon zest or dip cooled cookies in melted chocolate.
