Ingredients

- 2 cups mixed greens
- 1 large egg
- 1 tbsp olive oil
- 1 tsp vinegar
- Salt to taste

Instructions
- Wash and dry the mixed greens.
- Heat olive oil in a pan over medium heat.

- Bring water to a simmer in a small pot and add vinegar.
- Poach the egg for 3 minutes.
- Plate the greens and top with the poached egg.
- Season with salt and pepper.
